I recently created my own Easy Spinach & Cheese Omelet recipe, which is now my "go to" for a quick meal. The key to the recipe is a large pan that allows the eggs to spread thin while cooking.
Easy Spinach & Cheese Omelet Recipe
Ingredients:
2 EB Farm Fresh Eggs
3/4 cup fresh spinach leaves
3 Tbsp cup shredded mozzarella cheese
Garlic Salt
Whisk the eggs together in a small bowl. Heat a large square non-stick skillet to medium high. (You could use a round skillet, but I like the square!) Pour eggs onto the skillet. Once the eggs start to thicken, spread cheese over eggs, sprinkle with garlic salt to taste, and distribute spinach over top. Once eggs start to firm, fold omelet in half and then fold in half again to form a square.

I love eggs and making omelets gives a great opportunity to sneak in a bunch of veggies for the children. I you add just about 1/2 t of mayo to the eggs as you are beating them, it makes the omelet really fluffy and yummy! Herbs are great to add to eggs too!
